I have a passion (fruit) for baking.
#latergram to the max. I made these mini passion fruit éclairs in the summer when they were still in season. It was a traditional choux pastry that I’ve been using for years (it was my FIL’s recipe) filled with passion fruit pastry cream, dipped in colored whites chocolate and topped with cacao nibs from @tilintilinchocolate to mimic the look of passion fruit!
An éclair is one of my favorite pastries. I think of it as a healthier donut 😂 it’s a French pastry that is oblong in shape and grilled with cream and topped with chocolate. The dough used is a choux; a simple mixture of butter, water, flour, and eggs. It doesn’t use any raising agent and instead uses moisture from the dough to cream steam during the baking process to puff up the pastry. A choux can be used to make a variety of different items, sweet and savory, including profiteroles, croquembouches, and gougéres. My handy tip for making choux is to add the eggs one by one; eggs range in sizes so you may have achieved the correct dough consistency with less eggs!
