Weekend is just around the corner, you usually want to relax, eat comforting food but want it light so you don’t hit the bed again.. hence, comes the #Vegan burrito.
Now before you scroll over hear me out, this burrito is not all beans and not all rice. In fact it doesn’t have rice or beans at all, yet its delicious and extremely satisfying. Also this is not a traditional burrito, so you don’t have to strictly put what’s mention - its weekend time, have fun creating your own as well-
So what exactly is in this burrito? Basically everything you want (just make sure don’t put a lot of watery stuff in there, you want it crispy yet tender and juicy).
Mine was made with lettuce, marinated tempeh, cauliflower rice, sweet potatoes and chilli guacamole.
You got a party in your mouth! The sweet potatoes crashing into your chilli guacamole, the chewy tempeh and the crunchy lettuce! Wrap these ingredients and then toast the wraps and you will get you satisfaction from this meal, am sure 😋
PALEO CHICKEN TENDERS
haven’t made a savory recipe in a while that I really really looooved and I’m soooo excited about these AIR FRYER PALEO CHICKEN TENDERS. I’ve tested this recipe a few times with different things and this one is by far THE BEST! If you don’t have all the ingredients, you can always take a few things out (I’ll put an astrix by the things that you could take out ). .
1. 1 lb Chicken tenders (you can also use TOFU to make vegan, haven’t tried yet, lmk if you do!) I get mine from TJ’s
1. 2 eggs
2. 1 tbsp apple cider vinegar (helps with sticking)
3. 2 tbsp coconut aminos*
1. 1/2 cup almond flour
2. 1/3 cup hemp seeds
3. 3 tbsp of nutritional yeast* (if you take out, add more almond flour)
4. 1/2 tsp salt (or add your fav seasoning! Depending on how salty it is, adjust to your liking) jack and I put some Kickin Chicken in it! .
Directions: separate the ingredients per bowl, whisk the eggs very well. Dip the raw tenders in the egg wash, and then coat in bowl two while pressing the mixture onto the chicken. Preheat the air fryer to 400 F. Lay out the coated tenders on A SINGLE LAYER (it will take 2 rounds of cooking). Cook for ~12 minutes. Enjoy!!
Hungry? I (always) am! 🍽 I’m working with @craving_california on coming up with a mini brand design that is as equally drool-worthy as the food Leigh makes! 🥗🍝🍰 Craving California is a food blog sharing unfussy, down to earth recipes inspired by California’s vibrant + diverse food culture.
To communicate this visually, I presented two options — the first which uses a sans serif, geo- font and accents the geometric shapes (to be later used in patterns/icons/web elements) with this style, we get shapes that start to look like foods: tacos, pizza, cakes NOMS
The second option hints at retro also, but uses a blockier/rounded font that is oh-so-California 🌴 the brand accents would include the ☀️🍊 submark and lots of free form squigglies.
